Hosta's are related to asparagus and are a gorgeous addition to the landscape, and you can eat them too! This Hosta is one that I've been growing for the past 20 years and I can attest to the fact that it is delicious. I believe this variety is 'Sum and Substance' or something very similar. Flowers are a light violet and foliage is a soft chartreuse green. 

 

For best eating, harvest the new unfurled shoots in the spring by cutting at ground level. The plant should be mature, two to three years old, before you begin harvesting to make sure it has enough energy stored in the roots to regenerate after harvesting. 

 

Growing: This variety is a shade lover and grows leaves to about 1-2' tall when flowering and spreads to form a clump as it ages. I have it in deep shade and it loves it. The flowers are light purple/white. Water during the heat of summer/drought, but low maintenance otherwise. May be susceptible to slugs, so watch them and pick off slugs early in the season.
