The whole plant turns a deep purple red, especially after frost. Good yields and very hardy. Mildly flavored leaves turn dark green when cooked. Baltic Red is really quite gorgeous and a great choice for an “edimental,” an edible ornamental. (Photo and description from Adaptive Seeds)

 

Harvest kale leaves from the bottom, leaving enough leaves on top for the plant to continue growing (it needs leaves to keep photsynthesizing so don't strip it bare). Take a few bottom leaves from several plants when you harvest, that way you are not taking too much from any one plant. Harvested correctly, kale will stick around throughout the summer and will be even tastier after the first frost! It's a powerhouse vegetable for the garden and your health!
