Filipendula ulmaria. Meadowsweet has become one of my favorite food forest perennials to grow. If you've been to one of my classes you know I get excited about food as medicine, but this really is medicine! The salacylic acid in meadowsweet is what aspirin was derived from. The whole plant is useful and the flowers smell divine and add so much flavor and scent to summer teas! (Read up on the uses and precautions before ingesting).
Meadowsweet thrives in damp meadows (hello PNW!). It can get to 4' tall in bloom. The serated edges and coloring on the foliage are also very intriguing!
